Ingredient Spotlight: Buckwheat

Jar of granola

Despite its name, buckwheat isn’t related to wheat at all! The naturally gluten-free ancient grain is part of the same family as amaranth and quinoa. Known for its bold, nutty flavor, buckwheat has become a leading ingredient for gluten-free flours and noodles, and is also a great addition to baked goods, enhancing the flavor and texture of granola, cookies and other snacks.

Whole Foods named buckwheat one of the Top 10 Food Trends for 2024, calling it a “superfood seed,” —and we don’t see the popularity of this pseudocereal losing steam. As more farmers commit to sustainable agricultural practices, the use of buckwheat in crackers, granola and plant-based milks is expected to grow.

In fact, Fortune Business Insights says the global buckwheat market is expected to experience prominent growth in the coming years thanks to growing awareness regarding the health benefits of buckwheat and rising applications in various food products.

Nutritional Benefits

Buckwheat is a nutritious, gluten-free pseudocereal that offers a range of health benefits. Rich in complex carbohydrates, fiber and protein, it helps regulate blood sugar levels, making it an excellent choice for people with diabetes or those seeking stable energy throughout the day. Buckwheat is also an excellent source of essential minerals, including magnesium, iron and zinc, which support heart health, bone strength and immune function.

Its high fiber content promotes digestive health by aiding regular bowel movements and supporting gut microbiota. The antioxidants found in buckwheat, such as rutin, help protect cells from oxidative stress, which may reduce inflammation and lower the risk of chronic conditions like heart disease and cancer. Rutin, in particular, has been shown to improve blood circulation, lower blood pressure and strengthen blood vessels.

Additionally, buckwheat is rich in plant-based protein, containing all nine essential amino acids, making it a valuable protein source for vegetarians and vegans. It also has a low glycemic index, which means it is digested more slowly, contributing to better appetite control and reduced cravings.
